Handwashing Blessing (Netilat Yadayim)

     Our hands are the primary agents of our activity in the world, the means by which we accomplish major and minor tasks. We pour water over our hands before eating to recall the cleansing ritual of the priests in the Temple, and to symbolically remove the pollution of the physical world before praising God for the bread with which He sustains us. After the blessing for washing hands (Al Netilat Yadayim) is recited, it is customary to hold our hands out, palms upward, to symbolize receiving sustenance from God, and then to recite "You open Your hand, and fulfill the needs of all living things," followed by the blessing for the bread (HaMotzi).
